It's getting to be that time of year again. The time of year when its okay to have a few different cookies and to indulge a little in enjoying life.
So what is your favorite Christmas cookie?
Mine isnt really a cookie perse' but it was a favorite that my mom used to make us when we were younger. Its made with Jiffy vanilla icing mix, milk and peanut butter.
You take the jiffy icing mix and you add milk a drop at a time until it forms a fondant, then you roll fondant out between two pieces of wax paper till around 1/8 inch thick, remove the top layer of wax paper, take the peanut butter and spread on top of the icing, we always liked the crunchy kind, but the creamy works just as well. Then take the rolled out fondant and starting at one end roll it up, wrap it in the wax paper, put it in the refrigerator until it is ready to serve, take it out and slice into thin slices. Very sweet, simple and delicious.
I think what made it special is she didnt make it all year long only at Christmas time.
